Back to school means after school snacks! Some of my favorite things to eat are best enjoyed while unwinding after a long day at school. Here are 5 easy and delicious options:

AVOCADO TOAST (so simple, so delicious)

Toast up a couple slices of your favorite bread. Us a fork to smash a ripe avocado on top. Garnish with salt & pepper/hot sauce/parmesan cheese/olive oil and red pepper flakes/even a sliced hard boiled egg… the variations are endless!

SALMON TOPPERS (a fancy twist on tuna)

Strain the water out of a can of salmon. Smash it up with a little mayonnaise. Season with salt & pepper. Spread the mixture on crackers. Feel free to experiment by mixing other ingredients into the salmon. I like to add in chopped celery and pickles, or peas. I also sometimes mix a little mustard or horseradish in when I’m in the mood for a kick!

CONFETTI NACHOS (soooo colorful)

Ask a parent to help with these: Preheat the oven to 300. Line a cookie sheet with parchment paper. Toss together tortilla chips, cheddar cheese, sliced red and yellow bell peppers, and black olives. Bake until cheese is melted, 5-7 minutes. Garnish with sour cream, salsa, and pickled jalapeños if you like it spicy.

FROZEN YOGURT CUPS (refreshing!)

Mix together berries or chopped up fruit (mango is really good), a dollop of whipped cream or Cool Whip, and a cup of vanilla yogurt. Cover and freeze for a couple hours. Ta da!

NANNER SANDWICHES (banana brilliance)

Slice up a banana into rounds. Top half of the rounds with peanut butter. Use the un-topped rounds to close the “sandwiches”. Optional: dip in chocolate syrup.
