This recipe is so easy, you only need one dish! It’s a great option for an easy dinner when everyone is running around with after school activities and homework and so on.

ONE DISH CHEDDAR CHICKEN CASSEROLE

INGREDIENTS

1 loaf WHOLE WHEAT BREAD (day-old is better)

4 cup COOKED CHICKEN, cubed

4 cup STEAMED BROCCOLI, chopped

1 can CREAM OF CHICKEN SOUP

1/3 cup SKIM MILK

1/2 cup GRATED CHEDDAR CHEESE

1 tbsp BUTTER

DIRECTIONS

Preheat the oven to 400 degrees.

Make your own breadcrumbs! Break up the break into little pieces. You can do this by hand or in a food processor.

Grease a large casserole dish with butter. Spread a layer of breadcrumbs all along the bottom and sides of the dish, pressing to create a crust.

In a separate bowl mix chicken, broccoli, cream of chicken soup and any other vegetables you want to add until evenly distributed. Pour chicken mixture into casserole dish. Cover with more breadcrumbs and cheddar cheese.

Cover and bake for 20 minutes. Let cool and serve.

This recipe can be adjusted to any taste. Try adding cooked noodles or subbing the chicken for tuna!
